Panderjam Patès

Pates can provide a quick and easy supper for one or more.

They are delicious served on toast, exotic breads or for slimmers on Melba toast.

They are useful as a starter.

These pates can be frozen ready for any emergency!

Smoked Salmon and Avocado Pate-(Serves 6)

1 Large Avocado

8ozs full fat soft cheese such as Philadelphia

3 tabs lemon juice

6ozs smoked salmon

Salt and pepper/ pinch cayenne

2 tbspns double cream

2 tbspns finely chopped watercress (optional)

Halve the avocado, peel and remove stone.

Chop avocado and blend with the cheese and lemon juice

Add 4ozs of the smoked salmon. Blend

Season. to taste.

Finely chop the remaining smoked salmon and stir into the mixture with the cream and chopped watercress.

Spoon into a dish or individual ramekins and garnish with lemon wedges

You can freeze the pate for up to six weeks.

Sardine Pate -Very simple but very good.

6ozs full fat soft cheese such as Philadelphia

1 tin of sardines in oil.

Lemon juice.

Blend the ingredients together Season to taste and spoon into a bowl.

Chicken Liver Pate

1lb Chicken livers

3 cloves of garlic

1 large onion

6ozs butter

1 tspn of marjoram, thyme and parsley

2 tbspns brandy

Salt and pepper.

Melt 3ozs butter and gently fry the onion till soft

Add the chicken livers and herbs – continue cooking over low heat till soft.

Stir in the brandy

Whizz the mixture in a liquidiser until smooth. Put in container

Seal with the remaining 3ozs butter which has been melted.
